Enthusiastic amateur - worked as a presales engineer for a Silicon Graphics company back in the day, so did a fair bit of animation with Alias Wavefront, then Maya.

Still do video editing on various platforms, as well as sound editing.

Sonar and Cubase are my preferred audio platforms.

One of the challenges I have (and many others, especially the Scots) is speaking too fast - a combination of naturally fast pace and sometimes nervousness - so I take conscious pauses for breath, to look at at least 3 faces in the audience, and to think where my hands/feet are. I'm by no means a natural speaker, but am getting there through practice and following simple guidelines like these.

Is the question just, "Why does my video lose quality when I upload to YouTube?" If so, it's because YouTube isn't in the business of providing high quality video - it provides vast amounts of streaming video, so you should expect a lot of compression, and probably transcoding.

It is definitely possible, however there are so many ways to do it your question isn't specific enough to answer. If you don't yet know how to transcode a channel to another form, you might be better asking a question asking about the technical process required there. The parts of your question about renting in the cloud, and the fact there is a major legal problem you will face are also reasons I'm voting to close this question.

How are you going to guarantee that it is for home use/family use only? If it is on the Internet the usual understanding is that it is effectively public, so copyright holders will still be able to issue takedown notices - which is what worries hosting companies.

The default settings may not be ideal for your system - be aware that recording and encoding video is quite a CPU (and possibly I/O) intensive task, so the jerky video may be caused by hard drive contention or a heavily loaded CPU.
